Sorry for no post!

I have a great sandwich to share with you but not today, i am writing to apologize. I am in my last semester of college i graduate in April, i am taking 16 credits, getting married in 3 months, and this Thursday i am taking the GRE. I keep feeling that i am going to fail miserably and waste my 140 dollars that i paid, but its the only way i can even apply to graduate school is by taking the GRE which apparantly only shows for the 1st year of rich white males. Yay…. *sarcasm*

So bear with me i will be back soon! Maybe with something crafty too!

Balsamic Vinegarette Tofu Stirfry with avocado

083Hello everyone! :)   This recipe has so many flavors and texture elements to it that i can’t think of a name for it!

Items needed for this recipe:

-1 block of tofu (surprisingly i used silken tofu and it fried up nicely!)

-olive oil to fry tofu

-1/2 cup of balsamic vinaigrette

-Assorted Vegetables in your fridge, for me it ended up being grape tomatoes, portabella mushrooms, sweet onions, yellow & orange bell peppers, & zucchini

-cabbage

-spinach fettuccine 1 package

-1 avocado

Now the recipe! :)

1.) put olive oil in your pan and let it heat up a bit.

2.) put marinated tofu chopped into cubes

3.) fry up until browned on all sides, set tofu aside once finished.

4.) In a second pan toss your cabbage in diced into a bath of water and leave for about 5-10 minutes, you want it still slightly crunchy. Remove cabbage and set aside, put pasta into the water and boil for about 3 minutes (depending on your brand)

5.) using same pan if possible, fry up all veggies except for mushrooms, cabbage & tomatoes, once the veggies are cooked add mushrooms and then about a minute later toss in the tomatoes. Toss in tofu and mix until tofu is heated. Then set aside.

6.)  Plate the cabbage first, followed by a bit of noodles, then the veggie stir fry and drizzle a bit of balsamic vinaigrette on your plate.

7.) cut up avocado  and lay on plate to add a creaminess to the dish.

So i apologize to my readers i am MAJORLY on a salad kick, i believe its mostly because a year ago i was told i had to limit/regulate my Vitamin K intake and i was terrified of salads, asparagus, broccoli and those sorts of things mostly green stuff. But now i am more of in a whatever mode and i feel healthier when i eat those sort of things, so i am. This salad no lie is the most delicious salad i have ever eaten in my life, it is sweet, salty, savory, nutty, and awesome:) As you may know i live in Lower east Michigan, and there is a foot of snow on the ground and more keeps falling, and rather then soup i turn to salad.

Strawberry, Kalamata & more!
*note i did not measure i just tossed on the amounts, i have a small-medium sized hand so maybe 1/2 a cup for handfuls.

1 plate full of lettuce(per person or use a bowl for a big group and triple the amounts)- for my lettuce i used a trio i can’t remember the type but dole sells it in a box.
1 handful of dried cranberries
1 handful of pine nuts
4-6 pitted kalamata olives
2-5 pitted cherries ( i used bing)
2-3 sliced strawberries
1 pinch of sprouts
2-4 grape tomatoes
1-2 tbsp of strawberry balsamic dressing, or regular balsamic. (i included a photo of my favorite dressing.)
*note- the dressing has very little calories, no fat, low sodium, low carbs, it is amazing and the best balsamic dressing i have EVER had.

On another note, i went and saw ‘bride wars’ with Kate Hudson & Anne Hathaway, it was surprisingly good, not great mind you, but good quirky & funny. The wierd thing was the theater was full of chicks(no surprise), but behind me was a group of 5 guys just hanging out and they were not making fun of the movie, they seemed to be enjoying it. :D It was fun though and i recommend seeing it if you can.
